A very summery cocktail, this watermelon mojito adds juicy watermelon to the rum, lime, and mint mix for a pretty pink drink that's great for hot weather. There's nothing more refreshing on a warm summer evening! For more drinks to have on the patio, mix up a passion fruit margarita, a vivid hibiscus sour, or make your own Mai Tai with homemade orgeat.

Ingredients
In addition to the usual mojito ingredients, you'll need some watermelon juice. We outline how to make it below, or you can buy it, if you're lucky enough to find some!

Ingredient Notes and Substitutions
- Rum: Cachaça can be used instead of rum here for a Brazilian-inspired drink.
- Watermelon juice: sometimes this can be found in bottles, but it's hard to get without any additives. It's easy to make your own with a blender and strainer.
- Lime juice: use fresh limes for the best taste, not bottled juice.
- Simple syrup: use store bought or make your own.
Method

Step 1: add the cocktail ingredients to a shaker.
Step 2: use a spoon or something similar to muddle (lightly crush) the mint.
Step 3: add ice and shake to combine.
Step 4: pour into a glass and top with sparkling water before serving.
Top Tips
- Make your own juice: make watermelon juice by pureeing cubed watermelon in a blender and passing through a sieve. This is a perfect way to use up a mealy or less than perfect melon.
- Don't skip the muddle: you don't need a special tool for this - you can see Sophie used a wooden spoon - and it makes a big difference in getting that mint flavour through the drink.
- Reduce the syrup: if you want a less sweet mojito, you can use a little less simple syrup in the mix, since the watermelon juice adds some sweetness.
