Ingredient Notes and Substitutions

  • Marshmallows: large marshmallows can be used but take longer to melt than mini marshmallows.
  • Vanilla: clear vanilla will keep your melted marshmallows more white than standard brown vanilla. Note that clear vanilla is an artificial extract so it can be a little stronger than natural vanilla.

Method

Step 1: melt the butter in the microwave (or on the stove).

Step 2: add the marshmallows to the butter and stir well to coat.

Steps 3 and 4, marshmallows melted and mixed with cereal.

Step 3: melt the marshmallows in short bursts in the microwave, stirring each time.

Step 4: add the cereal and stir well to coat in marshmallow.

Step 5: gently press into a square dish.

Step 6: top with extra marshmallows and cool before serving.

Top Tips

  • Use fresh marshmallows: old, stale marshmallows won't melt as nicely and will make for slightly dry treats. Open a fresh bag for this and let the old ones dry out fully to use in chocolate marshmallow cookies.
  • Don't press too hard: press the treat mixture into the dish so that it's even, but don't pack it too tightly. If it's pressed too much, the treats will be hard.
  • Make it without a microwave: follow the same method with a large pot on the stove top. It's best to melt the marshmallows on low heat, which takes longer, but will result in chewier Lucky Charms squares.

This recipe makes a very gooey marshmallow treat. If you like a higher ratio of cereal, add an extra cup of Lucky Charms (42 grams).

The marshmallows will hydrate slightly as the bars sit, turning a more vibrant colour.

How to Store

Storage: keep in a sealed container at room temperature for 2-3 days, but note that they're best the day they're made. Refrigeration will make the squares hard.

Freezing: transfer to an airtight container and freeze for up to a month. Thaw at room temperature before serving.

While you might think adding more butter will make better treats, changing the amounts will make for soggy, greasy Lucky Charms squares.

Lucky Charms Marshmallow Treats

Equipment

  • Measuring cups and spoons or a digital kitchen scale
  • Microwave safe bowl
  • Square dish about 9x9 inches

Ingredients

  • ¼ cup salted butter plus extra for greasing the dish and flattening the squares
  • 4 ½ cups mini marshmallows or 40 large marshmallows, from a freshly opened bag
  • 1 tablespoon vanilla extract clear artificial or any other vanilla you like
  • 1 pinch salt
  • 6 ½ cups Lucky Charms cereal

Instructions

  • Lightly grease a 9-inch square pan with a teaspoon or two of butter. Set aside.
  • Measure the butter for the treats directly into a large heatproof microwavable bowl. Heat the butter on medium power until melted, about 1 minute.

  • Stir the mini marshmallows in the melted butter, scooping the butter up from the bottom of the bowl to coat the marshmallows.
    4 ½ cups mini marshmallows
  • Return the bowl to the microwave and heat the marshmallows until puffy and doubled in size, about 1 to 2 minutes. Give them a brisk stir with a spoon or spatula. If there are still pieces of marshmallow return the bowl to the microwave in 30 second bursts.
  • Once the marshmallows are fully melted and stirred smooth, add the vanilla and salt. Stir well, and then add the cereal. Continue to stir, making sure all of the cereal is evenly coated with melted marshmallows before scooping it into the prepared pan.
    1 tablespoon vanilla extract, 1 pinch salt, 6 ½ cups Lucky Charms cereal
  • Use a small piece of lightly buttered parchment paper to gently press the cereal into the pan and corners, smoothing the top. Optional step: Randomly place extra marshmallows on top of the squares for brighter colours. Cool the treats in the refrigerator for 30 minutes before slicing and serving.
