Pumpkin Coffee Cake

With pumpkin purée, pumpkin spice, and a sweet pecan streusel topping, this pumpkin coffee cake is fall in a slice.

Perfect for cold weather  and cozy afternoons.

WHISK

Whisk the dry ingredients  together in a mixing bowl.

WET

Add the sugars, butter, and eggs  to a second mixing bowl.

BEAT

Beat to cream, then add the pumpkin purée and vanilla.

MIX

Mix in the pumpkin and vanilla. It may look curdled. This is ok.

FOLD

Fold the dry ingredients into the mixed wet ingredients.

SPREAD

Spread the batter into a square baking dish with parchment.

TOP

Top the batter with pecan streusel. This is optional.

BAKE

Bake for about 1 hour. Remove from dish and drizzle with icing.
