Bread & Butter Pudding

A traditional British dessert, bread and butter pudding is made with buttered slices of white bread baked with sweetened egg custard, spices, and raisins.

1. Heat milk, cream, lemon zest, and raisins in a pot until steaming.

2. Mix lemon juice, eggs, egg yolks, and sugar in a heat-proof bowl.

3. Butter both sides of slices of bread and cut in half diagonally.

4. Arrange the slices in a buttered baking dish so that they overlap.

5. Slowly pour hot cream into the egg mixture, whisking constantly.

6. Pour the egg mixture into the pot and cook until thickened.

7. Transfer to a pourable vessel. Stir in spices and salt.

8. Pour the custard over the bread and bake for 45 minutes.
